Our main service is to build a facility to handle dates as agricultural product in Jericho after harvesting and make it available to both local and export markets in good quality. The Factory mainly targets the Medjool dates variety which is the main date palm variety cultivated in Jericho and Al-Aghwar governorate during the last decade since it has good potentialities for export and it needs climatic conditions only available the Jordan valley.

The packaging house performs several processes to improve the quality of the final date’s product. These processes includes:

Fumigation is a primary process in post-harvest handling of dates. It is done to clean the dates from any pests coming from the source (farms) including all stages of pests. This action will help to store the dates for long periods without any spoilage.

The facility will implement fumigation process for the received ripened and dried dates as first stage according to the international food standards Codex Alimentarius.

Since dates in the open field conditions are subjected to different contamination sources such as dust, dirt, soil, aerosols, exertion of birds and so, then washing with clean water is crucial step to release all these contaminants. The facility will wash the as first step in the production line using spray water accompanied with fine swiveling brushes to remove all contamination attached to the fruits. Then dates will be dried from any moisture using air blowers.

Date sorting is the major process in the facility, where dates will be graded and sorted by quality and size to different grades that meets the consumer’s requirements.
Sorting is done manually in the facility to remove all defected fruits.

Grading step is done just after sorting or it could be done in the same time and on same facility’s installation in the production line and it requires automated system. The aim of grading is to produce packed fruit, which is uniform in size, shape, color, texture, moisture and skin separation.
The automated grading system will grade according to two categories as follows:

  • Size of date fruit
  • Skin separation

The last stage in the production line will be packaging and sealing. Packaging will be automatic with minimum contact with workers. At this stage clean graded date fruits will be weighted and packed according to customer requirements. The production line will have a wide range of packing capabilities from retail packs of different sizes to bulk packs. Sealing insures that no contamination can occur for the packed date fruits.

After packing, the fruit will be sent according to customer requirement or stored in cooling store under -18 degrees Celsius. This temperature is sufficient to keep dates for almost two years.

Medjool This is one of the finest dates produced in Palestine, regionally and globally. Because it is grown in areas below sea level, there is an increase in the proportion of oxygen available to the palm which aids respiration and that in turn adds flavor and a distinctive color; the fruit is consumed at the Tamer stage.

The Medjool trunk is medium in size, leaves are short with average curvature and of medium width, and the number of spines on each leaf ranges between 30 and 38.

Fruit size varies from small to Jambo; shape is mostly oval, ranging between orange and yellow, topped with fine reddish-to-brown stripes that develop during the khalal stage. The fruit becomes reddish brown in color when fully mature and has a waxy coat and a light skin; the shrunken mesocarp is wrinkled and rough and has a flesh thickness of 0.5–0.7 cm, a soft texture, little fiber, and a delicious taste; and the palm is early bearing. The palm produces 70–90 kg per tree per year.

Barhi One of the most famous date cultivars, Barhi is characterized by its sweet taste and high per tree productivity, making its cultivation highly attractive. It is mainly consumed as khalal when still crisp in texture.
The palm has a spreading crown, green leaves, and an aesthetically pleasing shape. The fruit has lower calories than other cultivars, making it ideal food for diabetics. The tree produces a low number of offshoots which is attributed to the cultivar itself.
Hayani This cultivar is mainly cultivated for rutab consumption in the Gaza Strip.  Hayani, the most commonly grown cultivar, performs best over the three regions with an average fruit set of 87.6 %. It was concluded that the common climatic conditions.

Hayani is a large palm with large leaves of average curvature,  long thorns, medium-sized fruit, a length of 4 5 cm, and a diameter of 2.5–3 cm. The color is dark red at the completion of growth. Shape is cylindrical with a conical end.
The fruit turns black at rutab. In this phase the exocarp easily separates from  the mesocarp; annual production of this cultivar is about 90–120 kg per tree.
